Healthy vegan pizzaIf you don’t eat cheese and have been missing pizza, here’s a pizza you need to try!
Serves 4

Ingredients:
1 pound of Whole Foods 365 whole wheat frozen or fresh pizza dough

1  8 oz. can of re-fried beans

4 oz. of your favorite salsa

1 small onion

6 oz. of button mushrooms

½ teaspoon olive oil

6 oz. of fresh or frozen spinach

4 oz. of roasted red peppers

3 oz. of Cheddar or Jalapeno SPREAD

 

Cooking Directions:
Roll out dough and partially bake at 450 degrees for 5-7 minutes.

Sauté onions, garlic and mushrooms in olive oil until soft.

Take beans out of can and add just enough water to make spreadable. Spread on your pizza crust.

Next layer on your favorite salsa.

Next add onions, mushrooms and garlic, then add spinach.

Finally add roasted peppers.

Cook at 375 for 25 minutes total (about – check crust bottom). In the last 5 minutes add some delicious dollops of your favorite SPREAD!
